Pan-fried Rockfish


This is a really simple recipe, but delicious! 
 
I recommend using a non-stick pan.  Totally optional, but fish tends to stick pretty easily to pans.  We use extra-virgin olive oil to cook the fish, so keep the heat down to medium-high.  You don't want to overheat (olive oil becomes toxic and starts to smoke at a lower temperature).  Warm up your pan, add the olive oil (depending on the size of your skillet, use 1 - 2 Tbsps. of extra virgin olive oil).  Take your rock-fish fillets and put them in the pan.  Sprinkle kosher salt and pepper on the fillet and cook for 1-2 minutes, then flip, sprinkle more salt and pepper on the other side and cook another 1-2 minutes.  Right before removing from the pan, add 1-2 Tbsps. of butter to the pan, flip the fillet to coat.  Squeeze 1/4 of a lemon over the fillet right before serving.
 
Ingredients:
 
  • 1-2 pounds of rockfish, filleted
  • 1-2 Tbsps. of extra virgin olive oil
  • 1-2 Tbsps. butter
  • 1/4 of a lemon
  • kosher salt
  • black pepper

The Fisherman's Mom


We live by the coast and my son LOVES to fish.  Every weekend, he is out on the boat, fishing.  Which means, every weekend, we have fresh fish coming into the house.  Luckily for me, he has learned which fish that we love to eat, and the ones that we don't so much love to eat.  So, he brings us home rockfish, white fish, yellowtail, sculpin... (I'm still waiting for a halibut, but that would require him to be bottom fishing, which is apparently an issue), and he no longer brings home the oiler fish like barracuda and mackerel.

My husband has become an expert at preparing the fish.  He gets it all nicely trimmed and de-boned, then freezer packs the fillets that we are not going to eat in the next day or two.  Unfortunately, while he is doing this, the house gets filled with the not-so-lovely aroma of fish.  Here's where tip #1 comes in:

#1 While filleting fish, set a small bowl filled with vinegar in the kitchen.  For some reason, the vinegar absorbs the fish odor.  (Yay!)


With all of the lovely fish to eat, we have come up with a list of favorite recipes.  There are quite a few different cooking techniques we have tried, and we have discovered that the simplest ones have the most tasty results (most of the time).
